What is Caesar Salad?

A Caesar salad (also called ‘Cesar’ and ‘Cesare’) is a green salad. It is a salad of romaine lettuce and croutons dressed in lemon juice, egg, olive oil, garlic, Worcestershire sauce, anchovies, Dijon mustard, Parmesan cheese, and black pepper.

History of Invention

History says that The creation of this salad is generally attributed to restaurateur Caesar Cardini. An Italian immigrant who operated restaurants in Mexico(at the Hotel Caesar in Tijuana, Mexico in 1924) and the United States.

Caesar Salad Recipe

Ingredients and Preparation

  • 1 large head of romaine lettuce.
  • 3 cups French bread.
  • 1 cup olive oil.
  • 8 anchovy fillets.
  • 2 large cloves of garlic.
  • 1 teaspoon dry mustard.
  • 1 teaspoon Worcestershire sauce.
  • 1 teaspoon fresh ground black pepper.
  • 2 tablespoon lemon juice.
  • 1 teaspoon coarse ground salt.
  • 1/2 cup grated parmesan cheese.
  • 2 egg yolks for large eggs.
  • 1/4 cup parmesan cheese (shredded or shaved).

Method

  • Heat oven to 200C/fan 180C/gas 6.
  • Cut the ciabatta into cubes.
  • Spread over a large baking sheet or tray and sprinkle over 2 tbsp olive oil. Rub the oil into the bread and season with a little salt.
  • Bake for 8-10 mins, turning the croutons a few times during cooking so they brown evenly.
  • Remove from the oven and leave to cool.
  • In a medium bowl, whisk together the garlic, anchovy paste, lemon juice, remaining oil, and mustard.
  • Add the mayonnaise and Parmesan and whisk until well combined. Season to taste.
  • Tear lettuce into large pieces and put in a large bowl.
  • Scatter the croutons over the top, add the dressing, and toss.
  • Scatter the Parmesan on top and serve straight away.
